As I mentioned last week, I made my own granola bars but not without some issues. I had some major wax paper stickage and was cursing them big time. But, they were delicious and I was determined to make a batch that effortlessly released itself from the wax paper after cooling. This, my friends, was not such a batch.
First off, this is recipe is from Joyful Abode. In my first two batches, I followed the recipe exactly. I might start to deviate in my next batch, though.
Ok, time to make the granola. Dump the oatmeal, wheat germ, peanuts, and sunflower seeds on a rimmed baking sheet and toast in the oven.
Mix butter, honey, salt, vanilla, and brown sugar in a saucepan. I did this over low to medium heat and then removed it from the heat once everything was melted and incorporated.
Seriously spray some wax paper with non-stick spray.
Into a large bowl, add your dried fruit and toasted oat mixture. I’ve got cherries and blueberries here.
Dump in the butter/sugar/honey mixture and voila! Granola!
Just kidding. Mix it up really well- you need all of the dry ingredients to be sticky with the honey so everything holds together.
Then pour into your 9×13 baking dish lined with your well-oiled wax paper and press it down firmly so that your bars will hold together.
You’ll want to let this cool for 2-3 hours, or overnight if you’re anything like me and you have to cool them in the pantry in order to keep them away from curious cats which means that you totally forget to cut the bars until the cat is licking your face at 6am. No? That doesn’t happen to you?
Well then, take off the wax paper while saying a prayer that it hasn’t stuck to the granola. And gosh darn’it, it stuck some on the top. Peel off as much as the wax paper as you can, then slice it up. Wrap in plastic wrap and you’re good to go! I got 18 bars out of this recipe which comes out to approximately 200 calories each.

Yum. At one point last I decided I’d make granola/oatmeal breakfast bars every Sun night, so we’d have weekday breakfasts. They were tasty but I couldn’t keep it up. I’m impressed with your individual wrapping.
