Recipe Review: Chicken Chilaquiles

Chicken Chilaquiles. I love saying that word. Chilaquiles.

The original recipe is from Martha Stewart (and can be found here), but after making it, I have a few modifications (which can be seen here).

These are basically soupy-chicken nachos. My favorite part is how the tortilla chips get all soft and mushy. I’m strange, I know. But this recipe is breaking into my rotation. Quite possibly because this is so ridiculously easy to fix, especially if you already have some shredded chicken on hand.

  1. I’m not a big fan of Mexican- too spicy and I don’t like rice or beans much, but I love cheese- so I’d say cheese nachos.
